Ceviche is an amazing technique used for preparing seafood. It's done by marinating raw seafood in citrus. The acid from the citrus will actually "cook" the seafood. It turns the items into an opaque color and firms up the texture of the seafood. You can use fish, shrimp, and/or scallops for ceviche. It is delicious!

Why not have a ceviche station at your wedding or special event? This would be a fabulous idea for couples looking for something different or those who want to incorporate a Latin flair. Guests could fill their martini glasses or other containers with the seafood then add various other ingredients. Avocado, tomatoes, mangos, jalapenos, cilantro, scallions, and sesame seeds are just a few of the many ingredients that could be used for a ceviche station.
